You know how sometimes people use the word “rich” to describe desserts that are way too sweet for their liking? When I hear that word come out of those people’s mouths, I know that it is exactly the kind of dessert that I’m going to like!

 

And if you’re anything like me, you will love these Funfetti Golden Oreo Blondies because they are rich indeed!

Call it misplaced passion, but nothing gets me fired up like hearing someone describe a fudgy brownie covered in nuts and caramel as “rich” while raising their eyebrows and making googly eyes to communicate their true feelings about the dessert.

 

Stop using the word “rich” to mean “too sweet for my taste”….they just are not synonymous!

“Hey, it’s ok if you don’t like them! Some people don’t like very sweet desserts! But say what you mean and put your googly eyes back in your head. Thanks!”

 

I totally didn’t say that. But I sure thought it.

Confession: I like Golden Oreos better than regular Oreos.

The Golden Oreos on the bottom of these blondies act as a sort of soft crust that is completely addictive! Trust me, you will not be wishing for an original Oreo while you eat these funfetti blondies. No way, no how!

Funfetti Golden Oreo Blondies

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: about 24 blondies

Funfetti Golden Oreo Blondies

Ingredients

  • 1 cup (2 sticks) butter, melted and cooled
  • 4 eggs
  • 2 tablespoons vanilla extract
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 and 1/2 cups flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 package Golden Oreos
  • 2 containers colorful jimmies (a little less than 1/2 cup)
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Prepare a 11x13 inch baking pan by lining the bottom with Golden Oreos. Place Oreos in one flat layer across the bottom of the pan.
  2. Crush the remaining Golden Oreos by double bagging in zip-top bags and crushing, or pulsing only about 2 or 3 times in a food processor. Set aside.
  3. Combine cooled melted butter, eggs, brown sugar, white sugar, and vanilla in a large bowl with a spatula.
  4. Add in flour, baking powder, and salt. Stir gently until combined.
  5. Stir in white chocolate chips and about half of the colorful jimmies. Do not use nonpareils because they will bleed colors too much in the batter.
  6. Spoon the batter onto the prepared pan of Golden Oreos and gently spread with the spatula. Cover the batter with the remaining jimmies and the crushed Golden Oreos.
  7. Bake for about 25-30 minutes at 350 degrees. Test by inserting a toothpick into the center of the bars. If it comes out clean, they are done.
  8. Blondies must cool completely before serving. Over night is best, but at least 3 hours is necessary for bars to set so as not to fall apart when being cut. Store in a sealed container for about a week.
