These soft almond butter cookies are perfect pillows of nutty goodness drizzled in Nutella.


I thought about naming them “almond heaven pillows” but I wasn’t sure if that would be as clear of a title.

But it would have been arguably more accurate.

I’m starting to enter panic mode about school starting.

I get to teach 2nd grade. It’s my first full time teaching job with my own classroom of adorable underprivileged children and it is exactly what I have dreamed of doing for so long.

It is truly my dream job…


and I’m completely unprepared for it.

I haven’t even gotten to see my classroom yet beyond peeking at it from a hallway, I don’t know what materials I will be supplied with, I don’t know what things I need to buy or prepare, I haven’t even met the new principal yet!


Stress level to the max!

And when I’m stressed, I really like to bake. It calms me down and focuses me on something else.


The problem with baking is that it means that I’m not getting anything done like making behavior charts or buying organizational bins or collecting books for my classroom library, so then I end up feeling even more stressed!


So I try to find a happy medium by baking something quick, like these soft almond butter cookies, instead of something that has a lot of different components and steps, like my Boston Cream Cupcakes.


Which are totally worth it by the way, but just not in my time frame right now.

I bought almond butter for the first time and decided to make up a cookie around it, and they turned out ultra soft with a mild nutty flavor. And I decided to play up the flavors even more, a little drizzle of Nutella would do them some good.


And it did.


Tip: Warm up the Nutella carefully in the microwave to drizzle it from a spoon or from a squeeze bottle, but do not over heat it! The Nutella will seize up and will do anything but drizzle, so put it in the microwave for no more than 10 seconds at a time without pausing or stirring in between.


Now go de-stress and make some quick and easy almond heaven pillows…I mean soft almond butter cookies.


Soft Almond Butter Cookies

Prep Time: 10 minutes

Cook Time: 9 minutes

Total Time: 20 minutes

Yield: 24 cookies

Soft Almond Butter Cookies


  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 medium size egg
  • 1/2 cup granulated sugar
  • 1/2 cup almond butter
  • 1 tablespoon vanilla
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 and 1/2 cups all-purpose flour
  • 1/4 cup Nutella


  1. Preheat your oven to 350 degrees F. Line two cookie sheets with parchment paper, and set aside.
  2. With an electric mixer, cream butter and sugar. Add the egg, vanilla, and almond butter and mix.
  3. Add salt, baking powder, and flour. Mix until just combined.
  4. Using a cookie scoop or tablespoon, place rounded dough scoops onto a prepared cookie sheet. Bake one cookie sheet at a time for about 9 minutes, or until dough on top of the cookie no longer looks raw and the bottoms of the cookies are just barely starting to brown.
  5. Allow cookies to cool completely before drizzling with Nutella. Heat Nutella in a squeeze bottle or a bowl for 10 seconds at a time until warm enough to drizzle.
  6. Store cooled cookies in a sealed container at room temperature for about 5 days.
